Day 21 — A recipe
OOH yay!! this is a recipe for yum nua, or thai beef salad. i don't make this often because i rarely buy meat anymore, but it is one of my favorite things to eat.
ingredients
- 2-4 small shallots, sliced thin (depends on how much you like shallots)
- juice of 1-2 limes (1 if it's a super juicy sexy lime, 2 if they're just regular limes)
- fish sauce (umm idk how much i use...a tbsp?)
- cilantro (...enough of it. a handful?) chop chop chopped
- couple cloves of garlic, minced or crushed into a paste
- 3-4 bird's eye chilies (more if you want more spicy!), chopped (DON'T toss the seeds, idgaf what food network tells you to do, that is a waste of good flavor)
- 1/2 lb beef (skirt steak...something flat and cheap)
- mixed greens, tomatoes/cucumbers/whatever you want the "salad" part to be.
what do i do?!
cook the steak fast and dirty. broil it, sear it, whatever, but don't cook it all the way through. a minute or two each side. (keep in mind, it is meant to be a thin cut). cut against the grain into strips.
mix the shallots, lime juice, fish sauce, cilantro, garlic, chilies, and beef together. eat as is with the salad, or if you really want the most tender meat and the most developed flavors, let it sit in the fridge overnight. the lime juice will break down the steak proteins and it will literally melt in your mouth.
